Onion, Tomato and Fresh Goat Cheese Tart

Tarte à l'oignon, tomate et fromage de chèvre




You need:

For the dough:

200 g flour
75 g butter or margarine
Cold water
Salt

For the toppings:

2 large red onions
3 nice and juicy tomatoes
1 fresh goat cheese
1 tblsp sugar
Fresh basil
Olive oil
Salt and pepper

How to do it:

For the dough:

You can make it by hand or in a food processor. Place the flour and salt in the bowl. Mix together with butter cut in pieces. Then add the water. Feel the dough. It should have a nice elastic texture. You need to work for a longer time if you do it by hand.
Let the dough sit for a while before using.

For the tart:

In the meantime, heat 2 tblsp olive oil in a large sautee pan. Slice the onions and add them. Let cook on very low heat until extremely tender. This might take up to 45 mns. Always verify that there is enough juice. Add salt and pepper and 1 tblsp sugar.

Preheat the oven at 400F. Take a round pie dish. Grease it and roll the dough to place at the bottom. You are going to precook your dough. Make small holes in the dough. Place a piece of foil paper over the dough on which you put rice or dry beans. Place in the oven for about 10 mns. Remove from the heat. Remove the foil paper and keep for future uses.

When the onions are cooked, scoop them onto the dough. Slice the tomatoes and place them over the onions. Crumble the cheese and top the tart with it.
Put back in the oven for about 20-25 mns, or until the tomatoes and cheese are cooked.

Remove the tart from the oven. Place a slice on each plate and decorate with fresh basil. Accompany the tart with salad, or serve iit as an appetizer.
